Project

Mamie Normandie cooks 100% artisanal brioches from Normandie sold in hyper and supermarkets.

Their objective: To bring back “La Fallue” to the public, a classic brioche coming from Normandy dating back to 1897.

Solution

In order to allow Mamie Normandie to supply an artisanal brioche for mass distribution, LABO-CONSEIL designed and built a 300m² production laboratory with a production capacity of 12,000 pastries per day.
